Wiped Out


Ah...I've been such a bad blogger these past couple of weeks! I'm sorry! Needles to say, I started student teaching full time. I'm having so much fun in the classroom (the kids are hilarious), but the work load is pretty intense at this point. I'm at school 7-3 then home to plan and grade all afternoon and evening. I'm wiped out! I promise to post something beautiful this weekend...in the meantime, these Guy Aroch images are helping me to escape (albeit sitting on my bedroom floor with a box of girl scout cookies and period four's history essays at arms reach)! Note to self: must start planning my next adventure!

Happy Love Day


Today is Valentine's Day! I know many of you think it's just another greeting-card holiday, but I've always loved February 14th! I truly believe there's something special about a day that has been singled out to celebrate love. It's really something we should celebrate more than just once a year, but all too often life seems to get in the way. So, today we will do what we should do everyday...tell those people in our lives that we love them...and maybe eat a bit more chocolate than usual! xo

Empowered


For those of you who don't know, I had a little MacBook accident in September. The poor thing (How's that for personification?) was dropped at airport security in Denver! I almost cried when they told me it wasn't worth the money it would cost to fix.

It turns out the hard drive was still in tact, and my amazingly talented best friend (KM) offered to help! So, yesterday we sat at the kitchen table performing a technical surgery of sorts. Who needs AppleCare when you have YouTube, right? Neither of us are techies, but we did it! We removed the hard drive and transferred all of the old data to my new MacBook. We then decided to open up the whole thing...mostly out of curiosity. I know this probably doesn't sound super impressive to many of you guys, but I was so proud!

All too often I neglect to do things for myself. It's easier to take my pants to a professional for alterations, even when I know I could take the hem up on my own. This accomplishment just reminded me of all that I'm (we are) capable of...I feel empowered!

World Nutella Day!

In case you didn't know, today is World Nutella Day! I first learned about nutella during my time abroad in college, and the chocolate hazelnut spread has continued to bring delicious goodness to my life here in California. So, in honor of today...below is my favorite nutella cookie recipe!

Ingredients
1 3/4 c all-purpose flour
1 tsp baking soda
1/2 tsp salt
3/4 c nutella
1/2 c butter
1/2 c sugar
1/2 c brown sugar
1 egg
1 tsp vanilla extract

Preheat oven to 375 degrees
In medium bowl, mix flour, baking soda and salt.
In another medium bowl, cream together nutella, butter and both sugars using a hand mixer.
Add the eggs and vanilla.
Stir in the dry ingredients until incorporated.
Shape the dough into small (1 inch) balls and place onto a baking sheet.
Bake for 8-10 minutes

Note: These are super easy to burn, and will be very soft right out of the oven! Don't worry that they're too soft, because they will harden as they cool.
